Level 4 or Level 5? The drawings decide
Most disputes over a finished wall are really disputes over which level was specified. Here is the vocabulary, so the conversation happens before the work instead of after it.
Smooth — Level 5
Skim coated. What gloss paint and hard light demand.
Knockdown
Splatter, flattened. Common on South Florida ceilings.
Sand float — stucco
Exterior. Matching this on an old wall is the hard part.

That is the whole point for a general contractor: the person reading your drawings reads drawings for a living. Quantities come back measured, the finish level is called out per area, and the exclusions are written down before the job starts rather than discovered as a change order.
